Pogo Recipe: Russian Tea Cakes

Makes 4 Dozen Tea Cakes
Ingredients:
2 1/4 Cups All-Purpose Flour
1/4 tsp Salt
1 Cup (2 Sticks) Butter or Margarine
1/2 Cup Powdered Sugar
1 tsp Vanilla
3/4 Cup Chopped Nuts (preferably pecans)
1 Cup Powdered Sugar
Preheat Oven to: 400 Degrees Fahrenheit
Instructions:
  1. Mix flour and salt.
  2. In a separate bowl, beat butter, powdered sugar (1/2 cup), and vanilla until smooth.
  3. Gradually beat in flour mixture into batter.
  4. Mix in chopped nuts.
  5. Refridgerate dough for 1 hour.
  6. Roll into 1" balls and place on an ungreased cookie sheet.
  7. Bake for 10-12 min at 400°F until set, but not brown.
  8. While warm, roll cookies in powdered sugar.
  9. Cool cookies, and then roll again.
