Pogo Recipe: Passion Fruit Mousse

Serves 8 Guests
Mousse Ingredients:
1 Can Sweetened-Condensed Milk
1 Can Passion Fruit Juice (frozen is fine) or
8 Passion Fruits (halved, rinsed, and mashed to a pulp)
1 Envelope Unflavored Gelatin
1 Cup Water
3 Egg Whites
Ring Mold
Mousse Instructions:
  1. Blend the condensed milk and passion fruitjuice together and pour into a large bowl.
  2. Sprinkle the gelatin into the cup of water and let stand until the gelatin has dissolved.
  3. Beat egg whites in a bowl until stiff.
  4. Fold egg whites into the milk and juice mixture.
  5. Add gelatin and water to the mixture.
  6. Wet a ring mold and fill with the mousse.
  7. Place in a refrigerator for at least 6 hours.
Creme de Liete Ingredients:
4 Egg Yolks (three from the mousse plus one)
2 Cups Milk
1 Cups Sugar
Creme de Liete Instructions:
  1. Briefly whisk egg yolks together in a small bowl.
  2. Dissolve sugar into the milk in a sauce pan.
  3. Add egg yolks to the sugar/milk mixture and cook over low heat while stirring constantly.
  4. Remove from heat once it begins to simmer. Do not let it boil, or the Milk will curdle.
  5. Refrigerate for at least 1 hour.
Serving Instructions:
  1. Remove mousse from the ring mold and slice.
  2. To serve, place a slice of mousse on a plate and spoon the Creme de Liete on top. Whole cloves can be used for decoration, but don't let your guests eat them.
