Pogo Recipe: Korean Paht-Bing-Soo (Sweet Red Bean Icee)

Makes 4 Individual Desserts
Ingredients:
2 Cups Fresh Fruit (e.g. Kiwis, Strawberries, Bananas, Peaches, Mangos, Melons, etc.)
1 Cup Diced Sweet Rice Cake (Chap Ssal Dduk in Korean)
8 Cups Ice (shaved) (Bing-Soo in Korean)
4 Cups Vanilla Soy Milk
1 1/3 Cups Sweetened Canned Red Bean (very common in Asian grocery stores) (Paht in Korean)
Instructions:
  1. Dice the fresh fruit and set aside in small bowls, one for each type of fruit.
  2. Dice the sweet rice cake and set aside in another bowl.
  3. Make 8 Cups of shaved ice. This can be done by hand with a cheese grater, but it's much better to use an electric ice shaver or perhaps a blender. The best Paht-Bing-Soo has a snow-like consistency.
  4. Put 2 Cups of shaved ice in each serving bowl.
  5. Pour 1 Cup of soy milk over each of the bowls of shaved ice.
  6. Spoon 1/3 Cup of sweetened red bean over the top of each of the bowls of shaved ice.
  7. Give each of your guests one of the shaved ice bowls and place all other small bowls (with fruit and sweet rice cake) in the middle of the table.
  8. Your guests can pick their own fruit and sweet rice cake to place on top.
  9. Other optional toppings include: powdered sugar, vanilla ice cream, and flavored gelatin.
