Pogo Recipe: Nanaimo Bars

Ingredients:
1/2 Cup Butter
1/4 Cup Granulated Sugar
5 Tbsp Cocoa Powder
1 tsp Vanilla
1 Egg (beaten)
2 Cups Crushed Graham Crackers
1 Cup Medium Coconut
1/2 Cup Walnuts (chopped)
3 Tbsp Butter
1 1/2 Cups Icing Sugar
2 Tbsp Milk
5 Squares Semi-Sweet Chocolate
1 Tbsp Butter

Instructions:
  1. Place butter (1/2 Cup), granulated sugar, cocoa powder, vanilla, and egg in the top pot of a double boiler.
  2. Cook over simmering water for 5 minutes to melt all ingredients together.
  3. Remove from heat and stir in crushed graham crackers, coconut, and walnuts.
  4. Press this mixture into a baking pan and place in the refrigerator to chill.
  5. Beat butter (3 Tbsp), icing sugar, and milk together in a bowl until creamy and light.
  6. Spread this creamy mixture over the contents of the chilled pan. Place this back in the refrigerator to chill more.
  7. Break the semi-sweet chocolate into pieces (or start with chocolate chips) and place in a microwavable bowl.
  8. Place the chocolate in a microwave and cook on HIGH for 20-30 seconds at a time, stirring after each. Once the chocolate is mostly melted, add the butter in as well for the final spin in the microwave. (It's also possible to melt these together over the stove, but that takes longer.)
  9. Spread the chocolate mixture over the icing layer in the chilled pan.
  10. Refrigerate until well set.
  11. To serve, cut into bars.
