Pogo Recipe: Midge's Soft Ginger Cake

Serves 10-12 Guests
Ingredients:
1 Cup Sugar
2/3 Cup Shortening
1 Cup Molasses
1 Egg
1 tsp Ground Cinnamon
1/2 tsp Ground Cloves
1 tsp Ground Ginger
1/2 Box Cooked Raisins
1 Cup Sour Milk
1 tsp Baking Soda
Flour to Stiffen (batter should be thin)
12" x 9" Baking Pan (well greased and floured)
Preheat Oven to: 350 Degrees Fahrenheit
Instructions:
  1. In a large mixing bowl, cream sugar, shortening, and molasses together until smooth.
  2. Blend in egg, cinnamon, cloves, ginger, and raisins.
  3. Dissolve baking soda in sour milk. The milk should bubble and froth.
  4. Alternate adding flour and milk mixture to the large mixing bowl, beginning and ending with flour. The batter should be thin but not watery. If the batter is too watery, add more flour.
  5. Grease and flour a 12"x9" baking pan and pour in the batter.
  6. Bake for 35-40 minutes at 350°F until a toothpick stuck in the cake comes out clean.
