Pogo Recipe: Mel's Banana Bread

Serves 6-8 Guests
Ingredients:
1 1/2 Cups All-Purpose Flour
1 1/4 tsp Baking Powder
1/2 tsp Baking Soda
2 1/2 tsp Cinnamon
1/8 tsp Fresh Nutmeg
1/8 tsp Salt
1 1/2 Cups Over-ripe Bananas (mashed)
2 Egg Whites (slightly beaten)
3/4 Cup Sugar
1/4 Cup Oil
1 Tbsp Vanilla
3/4 Cup Chocolate Chips (Optional)
3/4 Cup Chopped Walnuts (Optional)
8" x 4" x 2" Loaf Pan
Preheat Oven to: 350 Degrees Fahrenheit
Instructions:
  1. In a medium bowl, stir together flour, baking powder, baking soda, cinnamon, nutmeg and salt.
  2. In a larger mixing bowl, stir together bananas, egg whites, sugar, oil and vanilla.
  3. Add the flour mixture to the larger bowl gradually, while stirring, until moist and well combined.
  4. Optional: Add 3/4 Cup chocolate chips or 3/4 Cup walnuts.
  5. Grease and flour the loaf pan or coat with non-stick cooking spray.
  6. Pour the batter into the loaf pan and bake it in the oven for 45-50 minutes at 350°F until an inserted toothpick comes out clean.
  7. Remove from oven and allow to cool for 10 minutes, then remove from the pan and place on a wire rack until cool.
