Pogo Recipe: Italian Almond Cookies

Makes 36 Cookies
Ingredients:
1 Lb. Almond Paste
1/2 Cup All-Purpose Flour
4 Egg Whites
1 Cup White Sugar
1 Cup Confectioner's Sugar
1 Cup Sliced Almonds
2 Greased Cookie Sheets
Preheat Oven to: 350 Degrees Fahrenheit
Instructions:
  1. Grease the cookie sheets
  2. Place the sliced almonds in a small bowl.
  3. Using your hands, mix the almond paste, flour, egg whites, and sugars in a large bowl until well blended. (It will be very sticky.)
  4. Use your hands to make a ball of dough about the size of a pecan.
  5. Roll this ball in the bowl of almond slices until coated.
  6. Place the ball on the greased cookie sheet and repeat until you run out of dough, leaving about 2 inches between each cookie on the sheet.
  7. Bake for 15-20 minutes at 350°F until golden brown.
  8. Remove from oven and allow to cool for a few minutes before removing to a wire rack to cool.
