Pogo Recipe: Italian Almond Cookies
Makes 36 Cookies
Ingredients:
| 1 Lb. | Almond Paste |
| 1/2 Cup | All-Purpose Flour |
| 4 | Egg Whites |
| 1 Cup | White Sugar |
| 1 Cup | Confectioner's Sugar |
| 1 Cup | Sliced Almonds |

| 2 | Greased Cookie Sheets |
Preheat Oven to: 350 Degrees Fahrenheit
Instructions:
- Grease the cookie sheets
- Place the sliced almonds in a small bowl.
- Using your hands, mix the almond paste, flour, egg whites, and sugars in a large bowl until well blended. (It will be very sticky.)
- Use your hands to make a ball of dough about the size of a pecan.
- Roll this ball in the bowl of almond slices until coated.
- Place the ball on the greased cookie sheet and repeat until you run out of dough, leaving about 2 inches between each cookie on the sheet.
- Bake for 15-20 minutes at 350°F until golden brown.
- Remove from oven and allow to cool for a few minutes before removing to a wire rack to cool.
