Pogo Recipe: Fresh Apple Cake

Serves 8-10 Guests
Ingredients:
3 Cups Flour
1 1/2 tsp Baking Soda
1/2 tsp Nutmeg
1/2 tsp Cinnamon
1 tsp Salt
2 Eggs
1 1/4 Cups Salad Oil
2 Cups Brown Sugar
2 tsp Vanilla
3 Cups Peeled and Diced Apples
1 Cup Chopped Pecans (optional)
1 1/2 Cups Powdered Sugar (to make icing)
10" Bundt Pan
Preheat Oven to: 350 Degrees Fahrenheit
Instructions:
  1. Mix flour, baking soda, nutmeg, cinnamon, and salt.
  2. In a separate, large bowl, beat eggs, oil, brown sugar, and vanilla until smooth.
  3. Gradually add flour mix to the smooth batter, beating the ingredients in smoothly.
  4. Mix apples and chopped pecans into the batter.
  5. Grease a 10-inch bundt pan.
  6. Spoon batter into the pan.
  7. Bake for 1-1.5 hour at 350F or until a cake tester comes out clean.
  8. Remove from oven and cool for 10 minutes.
  9. Mix water or milk with 1 1/2 Cups powdered sugar and a few drops of vanilla to make icing.
  10. Flip pan over a plate to remove cake.
  11. Drizzle icing onto cake.
  12. Sprinkle pecans decoratively over icing.
