Pogo Recipe: Fresh Apple Cake
Serves 8-10 Guests
Ingredients:
| 3 Cups | Flour |
| 1 1/2 tsp | Baking Soda |
| 1/2 tsp | Nutmeg |
| 1/2 tsp | Cinnamon |
| 1 tsp | Salt |

| 2 | Eggs |
| 1 1/4 Cups | Salad Oil |
| 2 Cups | Brown Sugar |
| 2 tsp | Vanilla |
| | |
| 3 Cups | Peeled and Diced Apples |
| 1 Cup | Chopped Pecans (optional) |

| 1 1/2 Cups | Powdered Sugar (to make icing) |

| 10" | Bundt Pan |
Preheat Oven to: 350 Degrees Fahrenheit
Instructions:
- Mix flour, baking soda, nutmeg, cinnamon, and salt.
- In a separate, large bowl, beat eggs, oil, brown sugar, and vanilla until smooth.
- Gradually add flour mix to the smooth batter, beating the ingredients in smoothly.
- Mix apples and chopped pecans into the batter.
- Grease a 10-inch bundt pan.
- Spoon batter into the pan.
- Bake for 1-1.5 hour at 350F or until a cake tester comes out clean.
- Remove from oven and cool for 10 minutes.
- Mix water or milk with 1 1/2 Cups powdered sugar and a few drops of vanilla to make icing.
- Flip pan over a plate to remove cake.
- Drizzle icing onto cake.
- Sprinkle pecans decoratively over icing.
