Pogo Recipe: Crazy Cake

Makes 1 New Orleans-style King Cake
Ingredients:
1 Cup Whole Milk
1/4 Oz. (1 Package) Yeast (about 2 1/4 tsp)
3 Cups All-Purpose Flour (sifted)
1 Cup All-Purpose Flour (sifted)
1 tsp Salt
3 Eggs
1/2 Cup Granulated Sugar
1/2 Lb. Butter or Shortening
1 Egg
Colored Icing and Candies to Decorate
Large Baking Pan lined with greased parchment or Silpat®
(Wait until step 12 to preheat the oven)
Instructions:
  1. Heat the milk to scalding and then allow to cool to lukewarm.
  2. Add some warm water to the yeast in a small bowl and allow the yeast to dissolve.
  3. Put the 3 Cups of flour in a large mixing bowl. Make a hole in the center of the flour and pour the yeast mixture there.
  4. Add the milk to the flour as well.
  5. Combine 1 Cup of flour with salt in a medium bowl and set aside.
  6. In another bowl, beat eggs, sugar, and butter together until the mixture is light.
  7. Add the egg mixture to the large bowl of flour and yeast and knead lightly by hand. If the dough is too stiff, add a little more egg.
  8. Allow the dough to rise to about twice its original size. Then add the flour and salt which had been set aside before.
  9. Knead the dough by turning over on itself three times. Cover with a cloth and allow to sit for about an hour as it continues to rise.
  10. Remove the dough from the mixing bowl, work it lightly, and form into a ring. Pat it to flatten it a little, and place it into the lined baking pan.
  11. Cover the pan and allow the dough continue to rise for about an hour.
  12. Preheat the oven to 325°F.
  13. Beat the remaining egg to form a glaze and brush it onto the cake.
  14. Bake for about 1 hour at 325°F.
  15. Remove from oven and allow to cool. Decorate with colored icing and candies.
