Pogo Recipe: Amanda's Scones

Makes 12 Scone Wedges
Ingredients:
2 Cups All Purpose Flour
1/4 Cup Packed Brown Sugar
1 Tbsp Baking Powder
1/4 tsp Salt
4 Tbsp (1/4 Stick) Cold Margarine or Butter (cut up)
1 Cup Berries or other flavoring (even mashed pumpkin works)
2/3 Cup Heavy or Whipping Cream
1 Egg
1/2 tsp Finely-grated Lemon Peel (optional)
Preheat Oven to: 375 Degrees Fahrenheit
Instructions:
  1. Mix, using a fork, flour, brown sugar, baking powder and salt.
  2. Beat in butter until mixture resembles coarse crumbs.
  3. Add berries or other flavor and mix. (If using delicate berries like raspberries, do not mix in. Press them into formed scones just before baking.)
  4. In a separate bowl, use a fork to mix cream, egg, and lemon peel.
  5. Gradually add cream mixture to flour mixture using a spatula to gently stir just until a soft dough forms.
  6. With lightly floured hands, knead dough GENTLY just until it comes together (about 3 or 4 times).
  7. Divide dough in half and shape each half into a 6 in round on a floured surface.
  8. With a floured knife, cut each round into 6 wedges and transfer to an ungreased cookie sheet.
  9. Bake scones 22-25 minutes, until golden brown.
  10. Serve warm or cool on wire racks.
